It is nice to be back in the kitchen, that's for sure.
Yesterday I made the "Big Hash" for me and Bryan before we headed to work. It consists of thinly sliced potatoes sauteed in olive oil with loads of veggies, scrambled eggs, salsa and shredded cheese. Hearty and delicious.
Bryan was out of the house early today for work, so I made lunch for one:
Curly pasta with a store bought vodka sauce tossed with garlicky kale and topped with shaved parmesan.
Easy, simple and yummy.
I'm looking forward to busting out some new recipes over our weekend. Perhaps baked salmon with a balsamic glaze?
