I had tonight off from work, and Bryan got off early in the afternoon, so I decided to perfect the Panko Crusted Salmon recipe for dinner tonight.
I had a little more faith in myself, and followed the recipe to a T (including buying lemons and using lemon zest in the crust) and I ended up not overcooking the fish (when you take the pan out of the oven and let the fish rest tented in foil, the salmon continues to cook so you won't end up serving raw salmon to your boyfriend. Promise).
I served the salmon on a bed of black forbidden rice with roasted brussels sprouts (with half a bulb of peeled garlic in the mix).

The lemon zest makes the crust. Don't skimp on the citrus!
